A sparkling wine made from black grapes. Hand-picked into small crates. Slow whole-bunch pressing. Fermented with no added yeasts, first in tank and then in bottle. Unfiltered and disgorged by hand (à la volée). A small amount of sulphur is added for keeping.

A living wine: it keeps evolving in the bottle. Serve well chilled.
