Qu'est ce qu'on attend ?

Un Tavel de Grenache et Cinsault... "Rosé" gastronomique

 

Vin obtenu à partir de Grenache et de Cinsault conduits en gobelets et provenant d’une parcelle située dans le terroir des Vestides (éboulis de lauzes calcaires sur argiles). Les raisins ont été ramassés à la main en petites caissettes puis macérés quelques jours en grappes entières avant pressurage. Fermentation sans ajout de levures. Vin sans collage ni filtration et auquel il a été ajouté un peu de souffre pour la mise et conservation en bouteille (sulfite total : 0,03g/L).

An interesting style, with engaging herbal notes, olive and bay leaf. Has integral tannins, but lovely freshness, balance and feels authentic, not overworked. Very fresh and drinkable, delicious with or without food. In conversion to organic.

Bright aromas and a lovely floral note. A ripe palate, with a creamy note and hint of spice. A rounded and red-fruit-led finish.

80% Grenache, 20% Cinsault (1955) from1 hectare on chipped limestone above clay soils on Malavent, part of Les Vestides, bought in April 2023 from a Co-operateur’s family, hand harvested, several days’ maceration, then whole bunch pressed, concrete vat vinification, wild yeasts, raised concrete vat 5-6 months, unfined, unfiltered, low added SO2, organic wine

 

slightly cloudy red robe; the bouquet has a blood-iron shaft of clarity, with a confirmed level of raspberry and redcurrant. The palate serves a neat offering of red berry fruit, is nicely reserved, well directed, continues with a pitter patter of finesse into an attractively juiced finale, a floral note there. It’s an airborne, but attractive style of Tavel, gives good, clear drinking, has some natural gras at its centre. 13.5°. 2026-27 Oct 2024 Previously March 2024 ***(*) red-tinted robe; the bouquet has a sweet noted air, cooked strawberries, a note of winsome crabapple red fruit. The palate offers an appealing texture on debut, its oil feel good, comes with supple gras, has a little red wine structure, and the length is pretty sure. This has character, is table wine, up for white meats, for example. 13.5°. 2026-27 March 2024
